Labrador tea, also called greenland tea, grows abundantly in our boreal forests. A true "health food", this plant has been used for millennia by indigenous populations to treat sore throats, fever, cough and insomnia. In Quebec, it can be harvested as soon as the snow melts until fall, and is used both in infusion and in cooking.
Labrador tea has aromas of bay leaf and citrus, making it an excellent substitute for bay leaf, rosemary and cedar.
USES
Like bay leaves, in bouquets garnis. You can also use it to season meat and game with fur or feathers. Labrador tea is also consumed very well in herbal teas and infusions, but also in desserts, cakes and jams.
AGREEMENTS
Labrador tea goes wonderfully well with citrus fruits, in sauces, creams and desserts, or even in digestive alcoholic liqueurs.
