Early April is the very first product Vallier has worked on, the hardest too! In dry conditions, it has only been around since 2021. Taming maple as a fermentable material and expressing its aromas in a wine that contains little residual sugar was a great challenge, the fruit of many years of experimentation! Dry or semi-dry, April Premixes is straight, expressive and well balanced.

At the Table – April Beginnings is enjoying well cool.
DRY – On the nose and palate, you first get the impression of a white wine on pear, crisp apple, citrus. It is only in the final that we recognize the fine notes of maple and that it creates surprise! It is very well drunk with sausage and fresh goat cheese, tapas, fish, grilled chicken, cheese fondue.
SEMI-DRY – Aromatic and without too much acidity, our semi-dry white is fruity with a round finish with delicate maple notes. We take out the sushi, seafood, we prepare small appetizers or a general tao, and we do good!
Cocktail – Shake it in a shaker with raspberry or blackcurrant cream, a few mint leaves and ice cream, this is a beautifully revisited kir. Try it also in our white sangria.
Plus – April Premieres contains very little sulphites (under organic and biodynamic standards).
