Also known as the honey mango, the Ataulfo mango is a small, bright yellow mango, named for its sweet honey flavor. It is also known for its buttery soft, non-fibrous texture which makes it ideal for mixing into smoothies, lassis and sorbets. The Ataulfo is smaller than most mangoes, but it also has a particularly fine seed, which means softer and juicier flesh.
