Adapted to cool and temperate climates, organic yellow peas are grown in abundance on Quebec’s beautiful South Shore. Best known for traditional pea soup, they are once again a modern food with the most sought-after nutritional qualities.

Superior to chickpeas for its protein content, LE PRÉ RIEUR organic yellow peas add just as much flavour, texture and variety to our menus.
Ideal for soups, salads, hummus, roasted pea snacks, etc!

Soaking:
(Doubles volume and reduces cooking time)
Cover peas with water

Method 1: In a bowl, add 1 teaspoon of baking soda to each cup of peas.
Soak for 10 to 12 hours.
Method 2: In a pot, bring to a boil. Boil for 2 minutes. Cover and remove from heat. Soak for 1 hour.

Cooking after soaking:
Rinse well. Cover with water or broth. Simmer for 3 to 4 hours over low heat.

Germination:
Cover the peas with water and soak for 6 hours. Germinate for 2 days, rinsing morning and evening. Cook for 4 minutes in boiling water. Rinse and dry. Store in the refrigerator for 7 days.
