Is your liquid honey pot solid?
Don’t panic, it’s normal and it even represents a certain guarantee of the quality of your honey!

As a general rule, the higher the glucose content of a honey, the faster it will crystallize. This is also the case for Quebec autumn honeys (often composed of the nectar of asters and goldenrods) which can in some cases crystallize within a month, especially if the water content of honey is less than 17%.

Unlike wine, honey does not improve over time. However, it can be stored for several years if storage conditions permit. But if the crystals are bothering you and you want to de-plant your honey without pasteurizing it, we try to do it at a temperature between 40 and 50°C. To do this we use a room to de-install but if you do not feel the soul to build or buy such equipment, a water bath may well do the trick, as long as you keep an eye on the temperature!
