They are incredibly versatile and delicious dried split vegetables. Like pasta, red lentils can be cooked in salted boiling water. They cook for approximately 20 minutes (they're tender, but still a bit crunchy), or until desired consistency. Tender with a mild, earthy taste, they can easily replace meat in meals: they can also be added to salads and soups.
